What is “amam dacotan Kyoto,” the hugely popular bakery from Fukuoka?

“amam dacotan Kyoto” is the third location of the hugely popular Fukuoka-based bakery “amam dacotan” and marks its first expansion into the Kansai region. It is the bakery’s final domestic location and is housed in a renovated Kyoto machiya.

“Amam Dacotan” is a bakery with its main store in Ropponmatsu, Fukuoka. Its unique atmosphere, based on the concept of “a small bakery in the town of stone,” captivates everyone who visits.
[1st Floor] Inside the bakery, where a variety of unique breads are on display

As soon as you step inside, you’re greeted by rows of bread displayed on stone tables. Amamudakotan offers about 120 varieties of bread, and a wide range of options—from savory to sweet—come fresh out of the oven one after another.

We avoid using pre-made ingredients as much as possible and are committed to making everything from scratch, resulting in hearty sandwiches so generously filled that the fillings practically spill out. Our lineup includes popular items like the “Dakotan Burger” and the “Croque Madame with Unzen Ham and Kyoto Eggs,” as well as sandwiches made with Kyoto ingredients.

The shop also features a wide selection of specialty pastries crafted with care by owner and chef Hirako, who is known for sparking the maritozzo and fresh donut trends. The diverse assortment of maritozzo and the original fresh donuts are filled to the brim with cream.
[2nd Floor] An eat-in space with soft lighting that evokes the atmosphere of a traditional Kyoto townhouse

On the second floor, there is a café area for dining in. The space is a renovated traditional Kyoto townhouse, and the staircase features floral arrangements by Nagoya’s renowned flower shop, “Flower Noritake,” which add a touch of elegance to the space. From the open atrium in the center, you can also watch the artisans at work.

The dining area features lampshades lined with washi paper, creating a magical atmosphere. In addition to two-person tables, the restaurant offers 45 seats in total, including a large dining table and counter seating arranged around the atrium. Come and savor a “unique experience” where the world of Amamudakotan blends with the atmosphere of Kyoto.
Let’s Go Inside! Tips for Enjoying Bread in Style at Amam dacotan Kyoto, Where Lines Form

When I visited, right in front of me as I entered the store were sandwich breads generously filled with assorted deli items, along with sourdough-style and baguette-style breads. Further down the aisle, starting from the center, were sweet breads and breads exclusive to Kyoto.

There are breadsticks placed next to the trays. The key point is that placing the breadsticks there helps distinguish between dine-in and takeout orders. Of course, you can also separate items by tray, so if your tray gets full, just let a staff member know and ask for a new one.

If you order a drink, go up the stairs and show your receipt at the bar counter right in front of you, and they’ll prepare it for you. There are both counter seats and table seats available, so find your favorite spot and enjoy Amam Dakotan’s bread in style.
A Review of the Popular Menu Items Exclusive to the Amam dacotan Kyoto Branch! Pricing Info Included

At Amamudakotan Kyoto, Chef Hirako, the restaurant’s representative, is also selling special breads he has been perfecting in preparation for the opening. Crafted with meticulous attention to detail, their unique texture transcends conventional boundaries, making them exclusive delicacies available only here. Below, we’ll introduce a selection of breads—carefully chosen from a lineup of over 120 varieties—that are exclusive to the Amamudakotan Kyoto location.
Kyoto Store Exclusive “Rare Shokupan”

“Rare Shokupan” is made by modifying the brioche dough typically used for fresh donuts. It was named “Rare Shokupan” because of its new, fluffy texture—which goes beyond that of ‘fresh’ bread—and its status as a truly “rare” bread unlike any other.

A slightly bitter, caramel-like aroma rises from the fragrantly baked bread. I had imagined the texture would be firm, but it was actually surprisingly soft, with a plump, chewy, and springy texture. When I took a bite, the rich, creamy flavor of the eggs spread throughout my mouth. The gently spreading sweetness and chewy texture made for a truly addictive taste.
Kyoto Store Exclusive “Nure Rustic”

“Nure Rustique” is characterized by its aromatic appearance and chewy texture. While traditional rustique bread, which incorporates a generous amount of water into the dough, has a hydration rate of 80% and is difficult to shape, this bread is distinguished by its astonishing hydration rate of 150%.

A delicate aroma that highlights the toasty flavor of the crisp crust gently fills the air. The inside has a chewy, moist texture with a rich, milky flavor and a soft, moist mouthfeel. Enjoy this bread with a whole new texture—the contrast between the toasty crust and the moist crumb is simply irresistible.
Kyoto Store Exclusive: “Moist Rustic Chocolate”

“Nure Rustic Chocolate” is a variation of “Nure Rustic” made by mixing in chocolate. It features cocoa and chocolate kneaded into the dough, giving it a sweet, dessert-like flavor.

A gentle, elegant aroma of cocoa wafts through the air. The addition of chocolate creates an exquisite balance between the bittersweetness of the cacao and the toasty aroma of the crust. The rich depth of the chocolate blends in, enhancing the moist texture. The sweetness of the chocolate itself is subtle; its appeal lies in its gentle sweetness, combined with the toasty aroma of the crust and cacao, and its chewy, springy texture.
An extensive drink menu! We serve coffee from the popular Kyoto shop “%ΔRΔBICΔ (Arabica).”

Amamudakotan Kyoto also offers an extensive drink menu. In addition to coffee made with beans from “% ΔRΔBICΔ (Arabica),” one of Kyoto’s most popular specialty coffee shops, the menu also features a variety of teas. Be sure to check out the house-made tea beverages, such as “House-made Chai” and “House-made Lemon Tea.” Of course, the quintessentially Kyoto “Matcha Latte” is also highly recommended. Enjoy a luxurious café experience paired with Amamudakotan’s bread.

What are the reviews and reputation of Amam dacotan Kyoto?

Amamudakotan Kyoto was the subject of much anticipation even before its opening, as it marked the first Kansai location for this popular, much-talked-about bakery. The shop has received high praise for its stylish interior—which makes use of a traditional Kyoto townhouse—and the breads neatly lined up on stone tables. Reviews also noted that every bread on the menu is delicious.
How long is the wait in line at Amam dacotan Kyoto?

According to the restaurant’s official social media accounts, the average wait time was estimated to be about 2 to 3 hours. Since the restaurant generally operates on a reservation system, we recommend enjoying sightseeing or a stroll in the neighborhood until you’re called to your table, so as not to disturb the local residents. However, during peak tourist seasons or other times when there are more people than usual, even greater crowds are expected, so be sure to take appropriate precautions while waiting.
How do I get there from the nearest station?
The recommended route to the store is to head toward Kyoto Station from Exit 6 of Karasuma-Oike Station. Not only is this the closest route from the station, but you can also get there directly from JR Kyoto Station via a single ride on the Kyoto Municipal Subway Karasuma Line. If you’re taking the Kyoto Municipal Bus, the nearest stop is the Kyoto Sanjo stop on Route 65. If you’re planning to stop by while sightseeing, please use this information as a guide.
Where do people line up for “Amam dacotan Kyoto”? Can you get numbered tickets or make reservations?

When traveling by train or bus, be mindful of where to line up and the distribution of numbered tickets. Previously, about 10 people would line up in front of the store, with the rest forming a line along Karasuma Street. The process has now changed: numbered tickets are issued, and customers are called in via notification before entering the store. It seems that many people line up before being called, which often causes inconvenience to the neighborhood. Please make sure to go to the store only after you’ve been called, and wait at the designated location even after being called.
